Single Serving Microwave Brownies

 

This recipe is a compromise between two undeniable facts:

1. Some days require chocolate

2. If I bake a pan of brownies, I end up eating most of a pan of brownies.

This recipe is a scaled down and simplified version of microwaved mug brownies as found here.

Single Serving Microwave Brownies

Ingredients
  

  • 1/4 cup brownie mix
  • 1 tbsp vegetable oil
  • 1 tbsp milk

Instructions
 

  • Mix all ingredients in a mug or ramekin
    Microwave on high for 50 seconds
    If still wet in the center microwave for an additional 10 seconds or untill done (cake should still be moist)

Carrot ‘fries’

Sweet potato fries are becoming ubiquitous as a healthier and tastier alternative to standard potato fries, but I have never figured out the trick of making them at home.  It probably has something to do with my refusal to deep fat fry them.  However, I found that using baby carrots makes a quick and easy vegetable side dish that is popular with both my husband and toddler.

Ingredients
  

  • 2 cups baby carrots or pealed carrot strips
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 F
  • Place carrots on a rimmed baking sheet and drizzle with olive oil
  • Sprinkle with salt and fresh ground pepper to taste
  • Toss to coat
  • Bake for 20 minutes or until brown.  Shake the pan every 10 minutes.

Herb Popcorn

I have never liked microwave popcorn.  It always tastes stale or too salty or too fake.  Using an air popper is just as quick and allows me to play with fun toppings.  This is my current favorite.

  • 1/2 cup popcorn kernels unpopped
  • 1/4 tsp salt
  • 1/2 tsp dried rosemerry
  • 1/2 tsp dried thyme
  • 1 1/2 tbsp butter

Instructions
 

  • Pop the popcorn in the air popper
  • Melt butter in microwave
  • Combine everything in a large bowl
